Charlie Wilson's WarWhat are some movies about American history in 1865 to 1980?There's Wyatt Earp and Tombstone... that's around the 1860's. For info on that period in the movies, you're mostly going to be looking at westerns.
There's a movie called Newsies (It's a musical) that covers the New York newsboy strike of 1899.
After the turn of the century, you can find movies taking place during most of the major wars in which America fought, and also some TV shows.
For the 1950's and 60's, there's a lot of stuff covering the civil rights movement as well. Remember the Titans is my favorite, set in the early 1970's. Also, for the 70's and 80's, you can look at Milk, the true story of the first gay man elected to public office in San Fransisco. There's also Rent, in 1980's New York.
